Why is steaming ribs better than boiled? I'm not sure that it is. I do it that way because I smear the ribs with mustard, then a dry rub. I let it sit uncovered in the refrigerator overnight so the rub drys to a crust. Boiling would wash it off, while steaming sort of firms it up and leaves it on, ...
