I got the alpaca shanks in the oven early this morning. I've always found braised meats to be better the next day. I guess it has something to do with collagen being cooked down into gelatin. That's what makes tough meat tender when cooked long and slow. Once the gelatin cools, it will never be quit...

I forgot to ask- Anybody got a good recipe for shank? A buddy gave me some alpaca shanks (yes, alpaca :D ). I also have venison shank, lamb shank and pork shank in the freezer. Gotta find a way to use it all soon... Also, I found a youtube channel that I'm in love with. "Helen's recipes".....

gheeesh!!! you come up with some mouth watering recipes. the pepperoni as garnish made made my squirters go bonkers(salivary glands) :D Interesting tool for spiral cutting.
