Homemade Summer Sausage and Hard Salami

Thought I would share my recipes for summer sausage and hard salami. Makes good trail snack.

Summer Sausage

5 lb.s deer or beef (for the less fortunate ;) )
5 tsp M.T.Q. (morton's tender quick)
2 1/2 tsp. mustard seed
2 1/2 tsp. garlic salt
2 1/2 tsp. course black pepper
2 tsp. crushed red pepper
1 1/2tsp. liquid smoke (mix with 1/2 cup of water)

Mix all ingredients together real good and let it marinade in the refrigerater for 3 days.
Remove from the fridge and roll into logs about 1 lb. each.
cook in oven at 175 degrees for 8 hours----turn rolls over every 2 hours.

Hard Salami

5 lbs. deer or beef for the less fortunate :lol:
2 1/2 tsp. cracked black pepper
2 1/2 tsp. mustard seed
1 tsp. hickory smoked salt
1 tsp. sage
1 tsp. season salt
1 1/2 tsp. garlic salt
1 1/2 tsp. onion powder
5 tsp Morton Tender Quick
1 tsp. liquid smoke mixed in 1/2 cup of water

Mix all the ingredients together as in the above recipe and follow the exact same cooking procedures.

I like to vacuum seal the rolls and keep them in the fridge until I'm ready to eat them.

Thanks a bunch Ridgerunner. I'll try thr hard salami this comming weekend or sooner :D

Last week everytime I opened the fridge it smelled like hard salami. It's no wonder why I choose your hard salami recipe :D

Thanks for sharing those . I have to locate some venison ;)

Thanks for the recipe. Where was it when I was grinding up the rest of my last years venison???? :o Oh well, I'll try it on this years take. Sounds fantastic.
