Scotch Eggs
Been meaning to bring this up for a while, but does anyone else make scotch eggs? I've made a few batches of them over the last couple of months and they are a huge hit here. (Well not with my wife, but she never likes anything I make anyway)
They are really easy to make and make a great trail food if made ahead of time.
Here is the generic recipe I have been using:
10 hard boiled eggs
2 lbs ground pork sausage
seasoned bread crumbs
Wrap each hard boiled egg with sausage maybe 1/4 -1/2 inch thick, to your taste. Then cover the entire thing with seasoned bread crumbs. Deep fry for a few minutes until the sausage is cooked well on the outside. Then bake in an oven @ 300 F for approximately 15 -20 minutes to completely cook the sausage.
I have eaten them right away, but to be honest I find I like them better if they cool in the fridge overnight. Very convenient to wrap up a couple and throw them in your pack for a day trip and they taste great!
